  • 1 tsp vanilla extract (for sweet crêpes)

  • Pinch of salt


🍳 How to Make Them

  1. Make the batter:

    • Whisk flour and salt (plus sugar if using).

    • In another bowl, beat eggs, milk, melted butter, and vanilla (if using).

    • Gradually add wet to dry ingredients while whisking to avoid lumps.

    • Batter should be thin, like heavy cream. Add a splash more milk if too thick.

  2. Let it rest (important!):

    • Let the batter chill in the fridge for at least 30 minutes (up to 2 hours). This relaxes the gluten and makes smoother crêpes.

  3. Cook the crêpes:

    • Heat a nonstick or crêpe pan over medium heat.
